iPhone Works With Any SIM Card?

I want to be with ATT for the iPhone plan but will be living in china for 3 months. i know u can now take out the sim card in an iphone and know that sim cards are popular in china. can i buy a sim card there and use my iphone out there for a cheap china cell bill price?
